Dietary Choices of Urban Minority
High School Students

The purpose of this study was to gather data on the knowledge of nutrition and health, and the dietary
choices of minority high school students in an urban setting. Focused group interviews, survey questionnaires,
and food diaries were used to obtain information about the food choices made on a daily basis by
culturally diverse high school students. The impact of the school meal program, as well as ethnic and cultural
patterns, were strong influences in terms of the teens’ dietary intake. This study offers insight into the
limitations and obstacles to achieving a healthy diet for this population of students.
